Pink and Green Thursday: The Wonders of Watermelon

It's my favorite day of the week - Pink and Green Thursday.  Play along at Trish's blog!

With Fourth of July in just a few short weeks, I have been doing some recipe research for yummy meals and side dishes we plan to share with our weekend guests.  There is one thing that is a MUST for any 4th of July celebration - watermelon!  It is cool and refreshing and keeps you well hydrated on hot summer days.
  • I would say watermelon is my favorite fruit, but did you know it's actually a vegetable?  It is related to cucumbers, pumpkins and squash.
  • In China and Japan watermelon is a popular gift to bring a host.
  • In Israel and Egypt, the sweet taste of watermelon is often paired with the salty taste of feta cheese.
  • Every part of a watermelon is edible, even the seeds and rinds
Whether it is in a fruit salad, or in a cosmoplitan, or simply served by the slice, this hmmm...  "vegetable" is as wonderful as it is pretty, pink, and green.

  10. Oh by the way Watermelon, and Feta Cheese, interesting, very, very interesting. Wonder if the Feta cheese I had in the bottom drawer is still there. It's 4th of July coming up, and the watermelon will be plentiful. You know what we do Jen? We load up one half of our sink with ice, and cut up the watermelon, and stick in a bowl in the ice, and everybody just stands over the sink and eats watermelon when they want. No messy crap to clean up elsewhere. I learned this trick in Perdido Beach, maybe we can run away there when you get back home. How much longer?

  13. The PERFECT summer pink & green post!! What a great color combination mother nature came up with, right?!? So pretty and low on calories, i think i'll have two slices, please!
I've actually made the watermelon sherbet cake in a bowl! Have you done that? it's so cute and easy! Line a perfectly round bowl with foil, and cover with with a thin layer of lime sherbet, freeze.
then layer on a LOT of raspberry sherbet mixed in with some chocolate chips (for the seeds) freeze again for several hours. Remove from the freezer, peel off your foil, then slice! so refreshing! (i couldn't resist giving you the recipe!) ;-)

  14. This is such a great collection of photos! You know that summer has finally arrived when the supermarkets are stocked full of watermelons! But I'm really loving that straw/strawberry piece idea. What a great thing to have at a little outdoor party!

  16. I love the watermelon theme for today's P&G Thursday post!! I have been loving watermelon this past week and have been wanting more!! The odd thing is I've never really been a watermelon fan but somehow my tastes have changed this year (crazy I know) and I'm super excited to finally love it (I've always wanted to in the past)! I also am loving that cake that looks like a slice of watermelon - yum!!

  18. I love this blog and this post! I love watermelon; reminds of camp when parents used to send watermelons and we would stand around after rest hour eating them. Oh and then there was that silly game of putting a seed on your forehead with a name of a boy you liked...

  19. Hey there my lovely Jen, I am giddy over here over all your watermelon pictures and fun facts, I think this might be my very very favorite Pink and Green Thursday post of yours EVERRR!! The baby in the watermelon outfit, OMG baby fever here we go again! The heart cut out in the watermelon, LOVE, let's try to figure out how to do that, what do you think, stencils? Wouldn't it be cute to do cutouts all over the watermelon, almost like a pumpkin? Very Martha, yes? We could recruit Melanie, she'd be all over it. I need to make that watermelon sherbert ice box pie for July 4 weekend, that is just adorable! Hmm..or perhaps this weekend for Father's Day...we're going to D.C....let me see if I can get myself together, my daddy would love it! :) Love the girl on the beach with her watermelon, tres chic, and who wouldn't love a watermelon overnight bag, I surely would love it!

I'm so sorry I missed your call last night..it's been another wicked week and Mattie kidnapped me for date night when we came home from work. We both needed to get out and unwind. Let me know if you're around this weekend and we can chat then! xoxo Love you!
